Tuwo Shinkafa (Northern Nigerian Rice Swallow) Recipe
Traditionally it’s called ‘Tuwo Shinkafa’.
Tuwo translates to soft dough-like food while Shinkafa means Rice (Hausa language).
Tuwo Shinkafa is a smooth and soft swallow made from rice; it is popularly eaten in Northern Nigeria. It’s usually eaten with soups like; Miyan Kuka, Miyan Taushe or Miyan Zogale and is a meal at the heart of Hausa meal culture.

Instructions:-
- Wash the Rice: Rinse the rice thoroughly to remove excess starch and dirt.
- Cook the Rice: Place the rice in a pot and add enough water to cover it well. Cook until very soft and overcooked.
- Mash the Rice: Once the rice becomes very soft, use a wooden spoon or local turning stick to mash and stir continuously.
- Add Water if Needed: If the mixture is too thick, add small amounts of water and continue stirring.
- Form Smooth Texture: Keep turning and mashing until it becomes smooth, thick, and stretchy without visible grains.
- Mold and Serve: Scoop into portions and mold into balls. Serve hot with your preferred Northern soup.
