The standard name of this popular Nigerian swallow dish is “Pounded Yam,” which is known in Yoruba as “Iyan”.
Pounded yam is basically yam that has been boiled then pounded or processed into a smooth, stretchy and lump-free dough.

It is one of the highly regarded and popular swallow dishes eaten all over Nigeria and is commonly paired with soups such as Egusi, Ogbono, Vegetable soup and Ofe Nsala, due to its smooth and palatable form and taste that compliment any dish.

  • Peel and Cut Yam: Peel the yam tuber and cut into medium-sized chunks. Wash thoroughly.
  • Boil the Yam: Place the yam pieces in a pot, add water, and cook until soft. The yam should be tender enough to break easily.
  • Drain Water: Remove the cooked yam from water and transfer immediately into a mortar.
  • Pound the Yam: Using a pestle, pound the yam continuously until it becomes smooth, stretchy, and lump-free.
  • Turn the yam with your hand (or wooden spatula) occasionally to ensure even pounding.
  • Adjust Texture: If needed, sprinkle a small amount of hot water while pounding to achieve a softer consistency.
  • Serve: Mold into portions and serve hot with your favorite soup.

Modern Method (Blender / Food Processor / Poundo Alternative)

  • Boil the Yam: Cook yam until very soft.
  • Blend or Process: Transfer to a food processor or powerful blender and blend until smooth.
  • Heat and Stir: Return to pot and stir on low heat to achieve the right stretchy texture.
  • Serve: Mold and serve hot.
