Tuwo Shinkafa (Northern Nigerian Rice Swallow) Recipe

Traditionally it’s called ‘Tuwo Shinkafa’.

Tuwo translates to soft dough-like food while Shinkafa means Rice (Hausa language).

Tuwo Shinkafa is a smooth and soft swallow made from rice; it is popularly eaten in Northern Nigeria. It’s usually eaten with soups like; Miyan Kuka, Miyan Taushe or Miyan Zogale and is a meal at the heart of Hausa meal culture.

It’s popular for its gentle taste, smooth and easily digestible texture which is ideal for every meal and special occasions.

INGREDIENTS

Short Grain Rice (Soft/Sticky Rice preferred) 2 Cups
Water As needed

Instructions:-

  • Wash the Rice: Rinse the rice thoroughly to remove excess starch and dirt.
  • Cook the Rice: Place the rice in a pot and add enough water to cover it well. Cook until very soft and overcooked.
  • Mash the Rice: Once the rice becomes very soft, use a wooden spoon or local turning stick to mash and stir continuously.
  • Add Water if Needed: If the mixture is too thick, add small amounts of water and continue stirring.
  • Form Smooth Texture: Keep turning and mashing until it becomes smooth, thick, and stretchy without visible grains.
  • Mold and Serve: Scoop into portions and mold into balls. Serve hot with your preferred Northern soup.
